Cowboy Cookie Protein Bites- THM S, LOW CARB
My Cowboy Cookies have always been a huge hit with people, and the dough especially. I made these Cowboy Cookie Protein Bites because I didn’t want to contribute to you eating raw eggs and getting sick (just kidding, I eat raw dough ALL THE TIME). But still, these Protein bites have all the taste and non of the caution. haha.
My kids could not get enough of these. This little one I kept trying to sneak them while I was trying to get photos…
They are low carb and are simple to make. The only have 2 tbsps. of old fashioned oats in the whole batch bringing the carb count to a carb per bite.
If you absolutely don’t want the ground oats just add 2 tbsps. of oat fiber or almond flour or even peanut flour.
And they are very versatile!
If you follow Trim Healthy Mama these are an S.
I used THM Whey Protein which I have found to be THE BEST tasting protein.
I also used THM Gentle Sweet which, honestly, I cannot find a better sweetener.

How many can you have per serving?
about 3 or 4!
Which size scoop are you counting?
I use the 1 tbsp. scoop.
I could not get your print button to work. nor could I copy and paste. They look good and I’d like to try them, but if I can’t print it, it will get lost “who knows where” and I’ll never find it again!
Hmmm.. I am not sure why?! Are you using a smart phone or your desktop? The print button works best from a desk top!
Bookmark it!!! Then it will be easy to find.
Or, ya know…there’s always pen & paper.
These look amazing and I can’t wait to try them! Should I chop the oats or grind them in the blender?
You can just chop it up! 🙂 That’s what I did!
How did you chop them? Trying to think of how to chop those tiny pieces!
I just chop it with my big knife a couple of times over.
Usually THM sweets leave me unsatisfied. But these. Oh my word, these little babies are divine. Absolutely divine. I cannot thank you enough for this!
Thank you so much for these!
Can you use THM a baking blend instead of almond flour? How much would I use? Thank you
Yep… you can use like 1/4 to 1/3 cup and leave out the oats!
Thank you! Love a no bake version of your yummy cookies! Can’t wait to try them tonight!
These protein bites are awesome! Thank you for coming up with the idea and sharing the recipe! I can see myself making these often.
Can I leave out the molasses?
Yes, you sure can!
Would love to try these but I can’t use almond flour..can you sub anything else for that?
hmmm… maybe like 1/4 cup of coconut flour.
Can I replace the THM Pristine Whey Protein Powder with something else? If so do you have any suggestions of something that I can buy at a store?
You can use any good whey protein!
Could THM Baking Blend be subbed in for the almond flour? Looking forward to trying this over the weekend!
The THM Baking Blend worked well; these are so delicious! Thank you!
I believe you can… just replace the almond flour and oats but use 1/4 to 1/3 cup of BB.
WE are in LOVE with this yumminess!! Do you have a complete nutritional label figured on these? I know we could do the math… just checking to see if you’ve already done it.
I don’t, I’m so sorry!
Per one ball, I came up with
91 cal
4g carbs
8.8 g fat
2.1 g protein
Thank you! Thank you! Thank you! These were fantastic. I made a big batch to share with my mom’s group when I hosted a “spa day” which included lunch (salad/smoothie bars and healthy treats). Everyone raved about these and did not believe for a second they were remotely healthy. They were like kids on Christmas when I told them it was all low carb and good for you and made them eat another one 😉 They all promptly demanded the recipe! Thanks again.
That is soooo awesome to hear!!! YAY!!
Yay! I love the cowboy cookies; can’t wait to try these.
These are delicious!!! I used peanut flour and had to use peanuts because it was the only nut I had on hand. But I love pecans and can’t wait to try those next time. Thank you for the recipe!
Oh yum! I was so excited to make these tonight, and found out I was out of lily’s and had no SF chocolate chips either! So I added 2 tbs of baking cocoa powder and just a tad more sweetener. Also added chia seeds in place of the oats. I’m gonna have a hard time keeping my hubby out of these!!
Thank you, thank you, thank you!!! These are delicious!! And so portable!! God bless you for sharing your culinary genius with the rest of us!! 🙂
OH, these are good when you run out of almond flour (used THM BakingBlend) and don’t like oats (used peanut flour) and need to make more vanilla extract (used caramel extract.
I used my 2 tsp cookie scoop and got 28 morsels of loveliness. Thank you!!!
Thank you so much!!!
Do you soften or melt the butter?
just soft not melted!
Can you use salted butter? I hate to run to the store for 1 item.
Yes, just leave out the extra salt!
Just divine! Thank you for this goodness – I “can” bake – I just have 6 kids and zero time- this was perfect for a make ahead treat to get me through the week – IF I can stay out of them!!
Can you skip the coconut? Hubby’s not a fan. The man who chews his fingernails complains coconut is like eating fingernails. Haha!
Yep, just add more nuts, if you’d like!
I made these yesterday and they are so yummy!!!!! Thank you so much for all of the great recipes. My husband and I have enjoyed so many of your recipes. We had the crunchy taco salad last night and it has become our favorite way to have taco salad!
YAY so happy to hear this!!
Thanks for the recipe – these are delicious!!!
Can you replace the Whey Protein for Collagen (or something else) to make it Dairy Free?
Absolutely!
I cannot have nuts or coconut, what do I replace them with?
Can you do seeds? You could do sunflower seeds?
No I cannot do seeds of any kind….can I put sugar free peanut butter in them, or will they be too wet?
yes, that would work great!! Just use like a couple tbsp. Or you could use the peanut flour!
How much protein is in each bite? My hubby needs a high protein bar and these look amazing!
hmmm I am honestly not sure… I can try and figure that out!
I can’t have nuts or coconut…what do I replace that with?
Delicious and so easy to make! Hard to keep the serving at three 🙂
Absolutely, delicious! AND so easy! Thanks so much!
How many of these would equal a serving?
Probably three or four.
what can i sub for almond flour? I don’t tolerate nut flours very well. thanks!
Hmmmm.. you can try baking blend or even coconut flour but for both you would want to use less.
My husband does not like coconut.. I’m attempting to find a recipe to replace some energy bites we currently make but have honey, peanut butter, etc. would leaving the coconut out ruin the taste or consistency?
You can just add more almond flour, or oat meal or almonds. 🙂
I love these. My husband does not do THM, but counts calories. :/ He was wanting to know how many calories are in each ball–or serving?
I don’t know off the top of my head… I will try to figure it out.
Made these for snack tonight… DELICIOUSNESS!! and FILLING! I made them with the suggested alternative of peanut flour. CERTAINLY will make these again… and give out to friends. THANK you, Sarah!!
I’ve made these several times, but the last time I added the 2 TBSP peanut flour. Oh. My. Goodness! That takes these babies to a whole new level of addictiveness! Unfortunately my kids think so, too. Now I have to hide my on stash 🙂
Does the butter have to be unsalted?
no just leave out the extra salt.
I have a homemade Gentle Sweet blend that I would say is more on the ‘granular’ side. Do I need to blend it for a finer consistency for these?
You might want to do that!
I made these to take on our 3 week “on the road “ trip. On part of that journey it wasn’t feasible to take them with – so left them at my daughters house. Then I got this text: Bad news is I ate them all. Good news is I made more! .
You’re recipes are great! Thank you!
Amazing! My only regret is not making a triple batch. Delicious and a great source of protein! Thank you!
Can you leave the rolled oats whole in these balls ?
Absolutely… just add a little extra almond flour to thicken it up.
Can I sub the molasses for honey? Our nutritionist wants us to me to use honey for my son instead of sugar free sweetener.
I think you could do that.
Can’t wait to try out this recipe! May I ask why It is specified to use a hand mixer? I only have a Kitchen Aid but could borrow a hand mixer, if needed.
You don’t have to use a hand mixer.. sometimes it’s just easier to use that then my Kitchen Aid. 🙂
, . . and I waited to make these – WHY? They are delicious and will now take the place of my Qwest bar as the only sweet treat that really satisfied me. I made mine with half butter and half butter flavor coconut oil. My ‘flour’ was a combo of BB, oats, peanut flour; my nuts were half pecans and half cacao chips. I will be making a quadruple batch of these in prep for hip surgery in a few weeks. Thank you for the recipe.
Can I substitue collagen for the whey powder? Whey protein makes me sick everytime I eat it, but I am trying to make sure I get enough protein in my snacks and meals.
Yes absolutely. I do this all the time!
Just made these for the first time tonight. They were so yummy!! Thank-you for all your hard work coming up with the recipe! ❤️
These are such a fabulous little treat! I told my kids they were edible cookie dough. I didn’t disclose any of the “weird” ingredients. They love them! We subbed a monk fruit sweetener and used a little less than a third of a cup. Plenty sweet! I also chopped up the chocolate chips to spread them around a bit more because my bag was almost empty. Good enough! This will definitely be a regular snack option at our house from now on. Thank you so much!!
Can I use stevia powder instead of gentle sweet? How much would I use?
Any idea how much protein is on each cowboy protein ball?
