This is one of my favorite favorite side dishes ever!!! Super easy to make (okay so the shredding of the veggies could be a little easier if you used a food processor) and so refreshing AND not to mention pretty! I love colorful food! You might begin to see a pattern with my recipes… I love food with color!
Gather you needed items. Shred your veggies. Cabbage of two colors, and one large or medium carrot. Cleaned and peeled.
See what I mean about pretty! Set veggies aside and get ready to make a super easy dressing. I LOVE to make most of my sauces/dressings myself! They just plain taste better than store bought and most of the ingredients you need, you already have in your fridge! They don’t have all the yucky added preservatives either and you can spicy it up!
Mayo, vinegar, spices, a dash of hot sause (Texas Pete baby) and a little sweetener. Salt & Pepper to taste. (for sweetener I use xylitol or Truvia. Staying away from sugar here. But don’t let that turn you away. Add your sugar if you want or honey. Just so you know, my husband thinks this Cole Slaw is the best he’s ever had. )
Pour over the shredded vegetables and give a good mix! Now, sprinkle on some Sesame Seeds. Yummy, refreshing, and delicious!

COLORFUL COLE SLAW
serves: 6 prep time: 15 minutes or less
1/2 green cabbage
1/3 red cabbage
1- medium to large carrot
1/2 cup real mayo
3 tbsp. vinegar
1 to 2 tsp sweetener (sugar or whatever sweetener you use)
a dash of hot sauce (I use Texas Pete)
1 tsp Cajun spices
1 tbsp. sesame seeds
Salt & Pepper to taste
Shred your cabbages on the large shred holes. Clean and peel carrot. Shred as well. Set aside, mix up your mayo, vinegar, sweetener, spices, hot sauce & salt and pepper. Pour over veggies. Mix well. Add sesame seeds last. Enjoy!!
