This is comfort food, right here! I wasn’t feeling well the other day. I needed chicken soup! I also needed something creamy. Here you go! Super easy! In fact, my chicken did not have enough time to thaw completely so I just cut up the frozen chicken and threw that into the pot.
Cut up the chicken breast meat into little bite size pieces. Chop up the veggies. Cook both in some Extra Virgin Olive Oil or Coconut oil or Red Palm Oil.
I also added a small cup of frozen veggies. This is an S chicken soup but there was not enough carbs in the small cup of frozen veggies to worry about. Add water or chicken broth to this.
Add spices, butter, and heavy whipping cream.
Scoop a big, comforting bowl of this Creamy Chicken Soup! I also added a big bunch of washed chopped kale to my bowl. It was sooooooo good!!
This fed about 4 adults so I would increase the veggies, broth or water, & add maybe a cup of heavy whipping cream to make it go further!! It was really full of meat and veggies so you could just stretch the recipe by added more cream & broth or water! It was really good and filling! An S meal if you follow Trim Healthy Mama! This would also work well in a slow cooker!

Description
A rich and creamy chicken soup. Perfect for that comfort food craving!! An S soup if following Trim Healthy Mama!
Ingredients
- 3 chicken breasts- cut up into cubes
- 2 tbsp. of oil for pan
- 1 zucchini cut up
- 1/2 cup of butter (one stick)
- 1/2 cup chopped onion
- 1 cup of mixed frozen veggies
- 2/3 cup of heavy whipping cream
- 2 or more cups of water or chicken broth
- 1/2 tsp poultry seasoning
- 1/2 tsp sage
- 1 tsp garlic powder
- 1 tsp onion powder
- salt & pepper to taste
- *Optional- chopped fresh Kale (I added to my soup bowl at the end)
Instructions
- Heat a big dutch oven with the oil.
- Chop the chicken & zucchini & onion.
- Add the chicken and vegetables to the pot.
- Add the mixed frozen vegetables.
- Cook until chicken is done.
- Add butter, cream, spices, and water or broth to the pot.
- Allow to cook to simmer for 30 minutes on low.
- You can add a bunch of chopped kale to the soup or to your bowl!

If I wanted to thicken this up a bit, how much gluccie would I use? And how exactly do I add it??

Hmm… I would add a good teaspoon. Just mix really well. I haven’t used gluc in soups, I usually us xanthan gum but it should work the same! 🙂 Just sprinkle with one hand and stir! 🙂 Let me know how that turns out!!

Yes, I think it would work great in the crockpot. I would leave the cream off until the end maybe. 🙂

I’ve had this in the crock pot for several hours now minus the olive oil, veggies and cream. Wanted to wait and add veggies later to avoid them getting mushy and will add cream at the end. The butter I added is floating on the top of the soup. Will that change when I add the veggies and cream or do I need to try and skim it off?

Yes it should mix together well when you add the rest of the ingredients… also give it a stir with each serving! 🙂
