This one is short and sweet… well not literally sweet but you know what I mean. 🙂 I LOVE the wedge salad! Crunchy lettuce, creamy dressing, & just all around yumminess! I decided to make one up for my husband and myself but didn’t just want to “BUY” a dressing, blah. I did buy the dressing but knew I was going to dress it up completely.
I bought a good glass bottle of dressing in the cold section of the produce. Not the funky, plastic bottled dressing that just tastes gross. I made sure it had ingredients that I could actually understand. Then I bought my blue cheese crumbles, fresh organic basil, & lime.
So here we go…
In a bowl I took the blue cheese crumbles, a little Texas Pete Sauce (as you can tell I put that in a LOT of my recipes. What can I say I just love spicy stuff!), some fresh squeezed lime juice, salt, a little Truvia to sweeten it, & finely chopped garlic cloves.
Add in your really good Ranch dressing or blue cheese dressing. I knew I was going to flavor with blue cheese so I just bought good ranch. Mix well!
Now slice big chunks of crunchy Ice Berg Lettuce. I bought the Organic kind & made sure to put it in the fridge right away to keep it cold & crunchy. Chop up a small hand full of tiny tomatoes and basil. Pour your dressing over the top of the Ice Berg Lettuce. Add your tomatoes & fresh basil. Sprinkle some toasted Almond Slivers on top. Serve while cold!
If you prep this before hand you can make this a great salad for guests! I am going to put good cooked bacon crumbles on top next time and some slightly sweetened toasted walnuts. But this was so refreshing & creamy, not to mention slightly spicy! If you are following the Trim Healthy Mama plan this is an S side salad!
SPICY BLUE CHEESE WEDGE

Ingredients:
1 organic head of Ice Berg Lettuce
1 small carton fresh tiny cherry tomatoes or whatever kind of little tomatoes you like
a handful or two of toasted almonds
a small bunch of fresh basil
a small carton of Blue Cheese Crumbles
a GOOD glass jar of Ranch dressing
1/2 lime squeezed
3 cloves of fresh garlic minced
1/2 to 1 tsp sweetenter (I used Truvia)
a dash or two or three of your favorite hot sauce (I use Texas Pete)
salt to taste
Directions:
Chop in big chunks your cold, crisp Ice Berg Lettuce. Put back in fridge to keep cold. Chop up a handful of the washed tiny tomatoes & basil. Set aside. In a bowl, add 1/3 cup of blue cheese, 1 tablespoon of the fresh chopped basil, 3 cloves of fresh garlic chopped to a mince, 1/2 a lime squeezed, a couple dashes of hot sauce, sweetener & salt. Combine well. Add in your 1/2 cup of Ranch dressing. Mix well. Get out your lettuce. Pour 1/3 cup of dressing over the top. Sprinkle your fresh basil, tomatoes, and toasted almond slivers on top. ENJOY!!!
