Just wanted to share this new little creation with you. Most “sweet potato recipes” call for lots of butter, sugar, marshmallows, and or nuts. But sweet potatoes are so versatile! I love them and since I began my Trim Healthy Mama journey, I’ve been eating them without all the fat and sugar. I still needed a good side recipes using the sweet potatoes. I wanted a mashed version that would be GOOD! Here is it! My husband deemed this “ABSOLUTELY DELICIOUS” and that’s huge because he usually only like sweet potatoes with butter, sugar, marshmallows!
Basically just wash and stab your sweet potatoes. Set the oven for 375 degrees and place the potatoes on the wrack for about an hour. Just check them off and on. If they squeeze easy after an hour you can take them out. If not, cook a little longer. Take them out, peel them, cut up, mash. Add ingredients. Voila! A PERFECT E side dish if you follow Trim Healthy Mama!! Not to mention the color is just straight up beautiful!! I had this with cut up chicken breasts in a homemade Asian sauce and roasted veggies!! So good!!
Mashed Sweet Potatoes

A delicious side dish to go with baked chicken or fish! So yummy!
Ingredients
- 3 large sweet potatoes (cleaned & stabbed)
- 1/2 cup fat free chicken broth (more if still too dry)
- Cajun seasoning
- Salt & Pepper to taste
Instructions
- Place the cleaned and stabbed sweet potatoes in the oven on 375 degrees for an hour.
- If they squeeze easily, take out, peel, cut up and place in a bowl.
- Mash up well.
- Add the chicken broth and stir.
- Add seasonings, stir.
- ENJOY!

Would you do this as a main dish or as a side? I’ve never had savory sweet potatoes, I normally just know that it will be a Crossover because I love it with butter, but this sounds amazing!!!
