HEY Y’ALL!!! I’m excited about these appetizers! I was watching The Food Network over the weekend and spotted an appetizer from Trisha Yearwood that I had to try but Trim Healthy Mama friendly!! Then I took that concept and turned it into a dessert appetizer! YES! It worked and was oh so yummy! I took it to my sister-in-laws birthday party that night! I will link the first recipe and my changes to make it Trim Healthy Mama friendly. The Cream Cheese Cookie Bites will be located further down so don’t miss that recipe!! 🙂

Whisk together egg, cream cheese and parmesan cheese.
Chop your jalapenos very small. I used two of them and also make sure to de-seed and de-core them so they are not too hot. Add your spices.
Blend well and roll into little balls.
This is where our recipes differ. I used a Joseph’s Lavash Bread that I toasted and crumbled fine in a food processor. I added salt and rolled the balls in the crumbs.
Bake these at the recommend temp of 350 degrees. I baked for 12 minutes to get a little more crunch. These are an S if you follow Trim Healthy Mama, like ME! ALSO, if you want to make them gluten free just use about 1 1/2 cups of almond flour instead of the lavash bread!!!

But to make them Trim Healthy Mama friendly here is my break down.
Keep the cream cheese, egg, parm amounts the same.
1- 8oz package cream cheese
2 cups of grated Parmesan cheese
1- egg whisked
Add 2 small jalapenos finely chopped.
Add favorite spices about 1 to 2 tsps. and salt. (I use Anitas which is a Cajun blend but use your favorite)
Toast 1 Joseph’s Lavash Breads (I find mine in the deli section of Wal-Mart with the other pita’s. You can also order them directly from Joseph’s Bakery or at www.netrition.com)
Or if you would rather go gluten free, just use about 1 1/2 cups of almond flour! Add a little salt and roll the balls into the almond flour (I use Almond Meal which I get a lot cheaper at Trader Joe’s).
Bake for 350 degrees about 12 minutes or less. YUM!!!! ENJOY!!

CREAM CHEESE COOKIE BITES

INGREDIENTS:
Cookie Batter
1 8oz package of cream cheese (if you want to use the 1/3 reduced fat, go for it)
1 egg
1/4 cup of truvia or your favorite sweetener (adjust to your sweet bud tastes)
1 tsp vanilla
1/2 cup of almond flour
1 tsp salt
1 tsp of xanthan gum (this is optional but if you want it to be stiffer use the xanthan gum)
1/2 to 3/4 cup of pecans chopped fine
1/2 cup of sugar free chocolate chips (ok the ones I used were just Hersey’s Sugar Free Semi Sweet Chocolate Chips. This is NOT on plan if you are a Trim Healthy Mama follower but I still have not found the stevia sweetened kind so I use these occasionally. You could also use half a Dark chocolate 85% bar chopped or even leave out the chocolate altogether and just use the nuts.)
Crumbs:
1 cup of almond flour
1/2 tsp salt
1 tablespoon of Truvia
1 tsp cinnamon
Directions:
Blend cream cheese, egg, sweetener, salt, almond flour and vanilla with a hand mixer. Add in the xanthan gum if you want to use that. Add the nuts and chocolate.
Roll in small balls and roll in the almond flour, cinnamon, sweetener mixture. Bake for 12 minutes at 350 degrees! An S Appetizer!! Enjoy!!

Hmmm… I think it’s more of a baked cheese cake consistency, more cheesy but not gooey… hope that makes sense! haha

I made these but not sure where I went wrong… They didn’t seem to stiffen at all still really soft..

Was it the jalapeno puffs or cookie bites? (I really need to separate the recipes). I’m guessing the cookie bites. They are not supposed to be stiff like a cookie exactly. They have more of a soft cookie consistency. If it is the cookie bites, the xanthan gum really helps with that and will stiffen them up. If you don’t have the xanthan gum you can use glucomannan or even add more almond flour. I used the xanthan gum which made them more stiff than what it would on its own. 🙂 Also, I think maybe adding one more egg would help if you don’t have above things I mentioned. Hope this helps some. 🙂

Can you substitute glucomannan 1 for 1? I know that works in some recipes, but not in all.

Made the jalapeño cream cheese bites and they were fantastic!!!! I put in one cup of sharp cheese and some white cheese instead of the Parmesan, because I didn’t have any on hand. So good!!! Will definitely be making these a lot!!! I don’t feel like I’m missing out of jalapeño poppers. Thanks!!!!!
