Crustless Quiche (THM S, gluten free, low carb)

Description

A crustless quiche that is packed full of wonderful goodness. A perfect THM S breakfast!


Ingredients

Scale
  • 8 eggs
  • 1.5 to 2 cups of chopped, cooked bacon (you can use turkey bacon or even sausage)
  • 1/2 cup of onion cooked in butter
  • 1 garlic clove chopped and cooked with onion in butter
  • 2 handfuls of fresh baby spinach chopped
  • 4 tbsp. parmesan cheese
  • 1/2 cup of mozzarella cheese
  • 1/2 cup of cheddar cheese
  • 1/2 cup of half & half
  • 1/2 cup of greek yogurt
  • salt & pepper to taste

Instructions

  1. Grease a deep 9″ pie dish with butter.
  2. Pre-heat oven to 350 degrees.
  3. Chop up the bacon and cook.
  4. Chop up and cook the onion and garlic in butter.
  5. Remove cooked bacon from pan and place on a napkin covered plate to catch the extra grease, add the cooked onion and garlic to the plate of bacon.
  6. Chop up the spinach.
  7. In a large bowl crack the eggs.
  8. Add the yogurt, cheese, half and half, spinach, and salt & pepper.
  9. Mix well.
  10. Pour into the well grease pie dish and bake for 40 minutes.
  11. Cut and serve!
  12. Enjoy!
