Color Cole Slaw is one of my favorite favorite side dishes ever!! Super easy to make (okay so the shredding of the veggies could be a little easier if you used a food processor OR just buy a couple of bags of dry cole slaw) and so refreshing AND not to mention pretty! I love colorful food! You might begin to see a pattern with my recipes…
It’s as easy as athering your needed items. Shred your veggies or buying two bags of dry cole slaw mix & dumping in a bowl. And making a super easy dressing. I LOVE to make most of my sauces/dressings myself! They just plain taste better than store bought and most of the ingredients you need, you already have in your fridge! They also don’t have all the yucky added preservatives and you can spicy it up!
Salt & Pepper to taste and you are ready to go! This Colorful Cole Slaw recipe goes great with my Sweet Southern BBQ Sauce & baked or bbqed chicken or pork!

Description
A Low Carb Colorful version of traditional Cole Slaw. Perfect for those summer BBQ’s!
Ingredients
Slaw Ingredients:
- 1/2 of a medium green cabbage shredded
- 1/3 of a medium red cabbage shredded (optional… you can use all green cabbage)
- 1– medium carrot shredded
Dressing Ingredients:
-
1/2 cup real mayo (I use either Duke’s or Hellman’s)

3 tablespoon distilled white vinegar
-
2 tablespoons of THM Gentle Sweet (or you could use 4 tablespoons of Monkfruit or Swerve)
-
a dash of hot sauce (I use Texas Pete)
-
1 teaspoon Cajun spices
-
1 tablespoon sesame seeds
-
Salt & Pepper to taste
Instructions
- Shred your cabbages on the large shred holes of a cheese grater.
- Clean and peel carrot.
- Shred carrot on large shred holes of cheese grater.
- Set aside.
- Mix up your mayo, vinegar, sweetener, spices, hot sauce & salt and pepper.
- Pour over veggies.
- Mix well.
- Add sesame seeds last.
- Enjoy!!

*** You can make this way easier by buying two bags of dry cole slaw mix!

My favorite coleslaw veggie combo lately has been green cabbage mixed with a little green pepper, onion and cilantro. I do have a food processor, so I whizz the peppers onion and cilantro first to chop, then add cabbage and process till fine. I’m anxious to try your dressing!

Thank you for this! I made it last night on a whim since I ran out of my normal coleslaw dressing. It’s delicious!! And so fast and easy! I just used one bag of coleslaw, left out the sesame seeds, and used apple cider vinegar. I wasn’t sure which kind I was supposed to use, but that worked great-gave it a little zing.
