Chocolate Cake for Two with three Topping options!
Wow, it’s been a while since I’ve done a recipe. Life has been crazy here! I’m almost 38 weeks pregnant with our #7 baby. So excited to see our little Miss but trying to cram a lot of things in a few weeks… eek!!
Valentine’s Day is coming up too. Actually we have our oldest daughter’s birthday on Feb. 12th, our baby is also due on the 12th, Valentine’s Day is the 14th and then my birthday is on the 16th… wow, my husband has a very busy week. LOL
We all know Valentine’s Day means lots of chocolate and this pregnant mama has been craving chocolate! I wanted to create a simple chocolatey cake for two with a couple of different toppings (because I couldn’t decided on which one I wanted, why not have them all). How romantic is that? AND these are THM! No sugar here, no gluten either. Just yummy goodness! 😉
The three topping options are: strawberry cream cheese, vanilla cream glaze, and butter pecan glaze. And if you are like me… try them all! They are all really good added on this rich dark chocolate cake. Each glaze makes enough to top the cake well.

Yes, this cake is rich but so good! Really hits that chocolate craving! It’s easy to whip together and bakes in the oven for 20 minutes. The toppings are easy to whip up too! Just keep everything at room temp for easy stirring.
This really is the perfect THM Valentine’s Day treat for you and your love to share… but if you want to make it your meal, you don’t have to share! haha It is a THM S meal!

Description
A sugar free chocolatey cake for two with three different topping options to enjoy!
Ingredients
- Cake-
- 1/3 cup of cocoa powder
- 3 tbsp. melted butter (unsalted)
- 1 tsp baking powder
- 1 egg
- 1 egg yolk
- 2 tbsp. of THM Gentle Sweet or your favorite sweetener
- 2 tbsp. of heavy whipping cream
- 10 drops of liquid stevia or add more sweetener
- 1 tsp vanilla
- pinch of salt
- pinch of cinnamon
Topping
- Strawberry Cream Cheese
- 2 oz cream cheese mixed
- 1 tbsp. heavy whip
- 1 tbsp. THM Gentle Sweet (two if using Swerve or Xylitol)
- 2 chopped strawberries
- 1/2 tsp vanilla
- pinch of salt
- Mix with a hand help mixer
- Vanilla Cream Glaze
- 2 tbsp. butter melted (unsalted)
- 2 tbsp. THM Gentle Sweet
- 2 tbsp. heavy whipping cream
- 1/2 tsp vanilla
- Whisk for 1 minute
- Butter Pecan Glaze
- 2 tbsp. unsalted butter
- 2 tbsp. heavy whipping cream
- 2 tbsp. THM Gentle Sweet
- 1/2 tsp vanilla
- sprinkle of salt
- 2 tbsp. chopped pecans
- Place butter, sweetener, and cream in a small sauce pan.
- Bring to a slow boil for 1.5 minutes.
- Remove from heat and add pecans, vanilla and salt.
Instructions
- In a small bowl mix the all ingredients for the cake.
- Spray a 2 cup ramekin with cooking spray (I use the Trader Joe’s coconut oil spray) or rub with butter or coconut oil.
- Preheat oven to 350 degrees.
- Pour cake batter into the ramekin.
- Bake for 15-17 minutes max 20 minutes (if you bake anymore it will dry it out).
- Mix toppings together while waiting.
- Directions above with ingredients.
- Take out and enjoy!
