Caramel Brownie Pie, oh my! For real, best dessert I’ve had in a WHILE!!!!! It’s moist, it’s kind of gooey, it’s chocolaty, it’s caramely, and it’s THM!!!!!!
Oh my oh my!!! This might just be my favorite dessert EVER!!!! And I’m so excited because I used the THM BAKING BLEND!!!! If you would like to order it through the THM Store HERE.
The THM Baking Blend is SUCH a great product!!! If you do not have that… try using about 1/2 cup of almond and 1 or 2 tbsp. of coconut flour or 1/2 cup of almond flour 2 tbsp. to 1/4 a cup of oat fiber. If it still seems too runny add a tsp more of coconut flour until you get more of a cake batter consistency. I have not tried this but this is what I would try if I did not have the baking blend!
I used the Pyure Organic Stevia for this dessert. It is comparable to Truvia but more Pyure, haha. (lame joke, sorry) But my FAVORITE SWEETENER is THM Gentle Sweet!!! But if you just have xylitol or erythitol or the THM Super Sweet Blend you can use those! For Swerve or Xylitol try 3/4 to 1 cup. For THM Super Sweet Blend I would not use more than 4 tbsp. (I love that THM Super SWEET BLEND goes a long way!
Mix all ingredients together. Nuts are optional but really add to the dish!
Here is a great caramel recipe to use for the caramel… Nana’s Little Kitchen Caramel Sauce
Pour the batter in to a well greased pie dish… pour the caramel sauce on top and run your knife through the batter.
Bake and allow to cool for 10 minutes!
THIS IS MOIST!!!!! This is gooey!!! IT’S AMAZING!!!!! It reminds me of Wacky Cake… and if you live in the south, you know what Wacky Cake is!!!!

Caramel Brownie Pie
- Cook Time: 35
- Total Time: 35 minutes
Description
It’s gooey, it’s chocolate, it’s caramel, it’s low carb and a perfect dessert!!
Ingredients
- 1/2 cup of THM Baking Blend
- 1/2 cup cocoa powder
- 1/2 cup butter (melted)
- 1/2 cup 0% greek yogurt or 1/2 a cup of sour cream
- 1/2 cup of Pyure Stevia or Truvia (if using THM Gentle Sweet use 2/3 cup, you can use 3 or 4 tbsp. of THM Super Sweet BLEND or you can use 1 cup of Swerve or Xylitol)
- 8 drops of Liquid Stevia (you can add about a tsp more of Pyure Stevia or Truvia)
- 4 eggs
- 1 tsp vanilla
- 1 tsp baking powder
- sprinkle of salt
- 1/2 cup of pecans or walnuts (optional)
- 1/4 cup (and more for a topping) of Nana’s Little Kitchen’s Caramel Sauce
Instructions
- Use room temp butter or melt on high for 30 seconds in the microwave.
- In the same big bowl add all of the ingredients and mix well.
- Preheat oven to 350 degrees.
- Grease a pie dish or a 9X9 glass baking dish.
- Pour brownie batter into baking dish.
- Make a double batch of the Caramel Sauce.
- Pour about 1/3 cup of caramel sauce over the top of brownie batter and run a knife through the batter.
- Place in the oven.
- Bake at 350 degrees for 35-38 minutes.
- Allow to cool for 10 minutes.
- Top with more Caramel Sauce & or whipped cream & nuts!
- ENJOY!

So it just takes a few TB of Oat Fiber to replace the Baking Blend???
No… I haven’t actually tried the substitute but you can try 1/2 cup of almond flour with 1 to 2 tbsp. of coconut flour or 1/2 cup of almond flour with 2 – 4 tbsp. of oat fiber. If it still seems runny I would add a couple tsps. of coconut flour until you get more of a cake batter feel. Hope this helps! I updated my recipe to state this a little better! 🙂

I made this tonight and the batter was extremely runny. I added some more baking blend until it thickened up a little. It is in the oven now, so it may turn out. Your batter doesn’t look runny at all. Thoughts?

This is my second time baking and this time I used Truvia instead of the THM sweet blend and the consistency was fantastic! Using the sweet blend still was yummy, but runnier.

I know this defeats the whole purpose of the caramel part of the recipe, but have you made it without the caramel sauce? I don’t have some of the ingredients for the sauce but would love a brownie on plan! 🙂
YES! If you do, you might want to bake a little less than what the directions say. It may not be as moist but it will still be good! If you want it to be more moist you can add some sugar free chocolate chips! 🙂

Yes, I’ve actually eaten it with a scoop of low carb ice cream!! 🙂 And also you could pour a little sweetened cream on it as well! 🙂

Thank you do much for posting this. I just ran out of super sweet blend and am in a mini panic mode. I bought pyure in a punch, and all my recipes are not tasting as yummy as they used to. Do you recommend a pyure to ss conversion?
If using the Pyure in replace of the Super Sweet Blend I would add more!! 🙂 It compares to Truvia or Gentle Blend!

Oh gosh I will check on that!! As far as the Gentle Sweet… I think it’s a little less sweet than Truvia so I do about 1/2 cup in most baking recipes to 1/2 cup and a few tablespoons. Hope that helps.
On the caramel sauce… How much Pyure could in use in place of the xylitol?
I would use half to 1/3 less the amount of xylitol. 🙂

Wondering what brand of cocoa you used for this recipe? I’ve made other recipes using Hersey’s 100% cocoa and it came out very bitter. Any suggestions? Thanks!
I do use Hersey’s Special Dark… sometimes I will use the HEB brand or Nestle’s.
I made this today with the super sweet blend and made the Carmal sauce with the super sweet blend…. And added 1/4 tsp xanthum gum and a bit more molasses (I like the dark taste of black strap yum!)…. They both turned out so well!!
My brownie batter had a hard time coming together and so I beat it a long time in my kitchen aid mixer and it can out fluffy! I think that helped it cooked fluffy as well.
The sauce is darker and a little grainy -I’m assuming from the xanthum gum but it’s so good! Wish I could share my photos!

I usually just add it to the top as is bakes and then spoon on at each serving!
