So I’ve been following the Trim Healthy Mama plan since last May of 2013. I lost 40 lbs! Yay me! I am now 27 weeks pregnant with #6 and at the smallest I’ve ever been pregnant. I also have only gained 4 lbs! Whoop! So why am I telling you this before my cookie recipe? Because I can actually eat these cookies and not feel guilty or worry about gaining back my weight. Yes, I did give up sugar and white flour but it was worth it! The meals/desserts that I eat are amazing and I don’t feel deprived at all! My only problem was I could not find a recipe to replace my favorite chocolate chip cookies so I wracked my brain until I came up with this recipe and it makes me HAPPY!!!! They are YUM!
Mix your cookies up like you would regular cookies. Butter, sweetener, eggs, vanilla. Then add your flour, soda, salt.
Mix up. I LOVE my Kitchen Aid! I have to say the BEST THING I EVER ADDED TO MY KITCHEN!!!
Add your nuts & chocolate chips. Mix again!
Scoop batter on to a cookie sheet covered with parchment paper.
Bake & let cool! EAT UP!!!!
(Once again, these are consider an S dessert if you are following Trim Healthy Mama, but if you would rather not use any sweetener, you can just replace with 1 cup white sugar & 1 cup brown sugar. Keep everything else the same. You could even replace with a 1 cup of honey or 1.5 cup honey.)
ALMOND FLOUR CHOCOLATE CHIP COOKIES

Makes: 24 to 30 Bake: 10 mins at 375 degrees

Ingredients:
2 and a half cups of Almond Flour (I use Trader Joe’s Almond Meal Flour, it’s like less than $5 for a 1 lb bag)
3 eggs
2 sticks of butter or 1 cup of butter
1 tsp vanilla
1/2 tsp maple flavoring (you could do without this but it gives it the brown sugar flavor)
1 and a 1/4 tsp baking soda
1 tsp salt
2 cups of ground up xylitol (Here is where you can experiment with what works for you. You could use Swerve or Truvia or Splenda or Stevia (only add a tsp or so of stevia) or Sugar or Honey.)
1 cup of pecans
1 cup of sugar free chocolate chips (I used Hersey’s Sugar Free Chocolate chips but this is NOT on THM plan but it is sugar free. You can also chop up 85% chocolate & replace the sugar free chips with that instead. Or find the on plan sweetened kind, I have not found them… YET!)
Directions:
Mix butter & sweetener together. Add the 3 eggs and extracts. Mix. Add your flour, salt, soda. Mix. Add your nuts and chocolate. Mix well, scraping the bowl. Cover a cookie sheet
with parchment paper and layer your cookies three in a row. Bake at 375 degrees for 10 minutes. Allow to cool for 5 minutes before removing from cookie sheet. ENJOY!!!

What did I do wrong? ? I ended up with cookie pancake. I didn’t have nuts, and I had to use two different types of sweetener, but I wouldn’t think that would change the consistency. Tastes OK though.

Hmm… did you add baking soda? I am not sure what would cause it to flatten out so much. Did you add the extra eggs? I’m sorry they didn’t turn out! 🙁

Before 🙂 I need to change this recipe up a little to add 1 more egg and 2 tablespoons for coconut oil! Helps make it more moist! And also, if you cannot find the sugarfree chocolate chips add a chopped 85% chocolate bar. That helps also to keep it moist! 🙂

They have turned out like that for me too. I’ve had them puffy and then flat… wondering if the weather is messing with them. Or it could be the soft butter! Glad everyone loved them though! haha 🙂

Only think I can think of is maybe the almond flour was packed too much… I usually just scoop and shake for almond and coconut flour. So sorry they were crumbly!! 🙁

I skipped mixing in the nuts during the mixing part..then made one dozen with a big fat walnut on top pushed into the cookie.and the next dozen I mixed in unsweetened coconut ….ahhhh yeah! I also used 1/3 cup of THM’s sweetblend for my sweetner…plenty sweet. Yum Nom Nom

Could I sub some oat flour or oat fiber for part of the almond four and still keep them an S? Or would I need to change it to egg white and just make them a complete E? Thank you for your help! You are so good to share all of this with us! 🙂

Yes you can sub oat fiber for use… oat flour you would want to keep to like 1/3 cup!! 🙂

Your Chocolate Chip Cookies were wonderful! Best baked cookie recipe I have tried since going THM. I gave them to several of the older gentlemen in our church who are diabetic. Of course I did not tell them they were legal to eat. Their wives were thrilled that they didn’t have to be worried about their sugar intake. My cookie monsters in the house ate them to the point I had to hide the rest for me. Thank you!!!

Can you help me out on this? How much Swerve or Truvia would I use in this recipe? Not sure how they compare to Xylitol or what the measurement would be. Looking forward to trying these! They seem like they’ll be the most like the real thing.

For swerve it measures the same as xylitol. For Truvia I would use half the amount.

Excellent recipe, thank you. I added some cocount flakes and stevia/carob “cjhocolate” made with cocoa butter, carob, stevia, vanilla, and a little honey. Folded the pieces in instead of chocolate chips. These cookies came out great. Thaks again, Gene Barnett

i think i reacted to the xylitol…. 🙁 such a terribly rumbly tummy for the next few hours after i ate the cookies. the batter was very soft and the cookies ended up spreading very thin… i might try cutting back on the butter and adding more flour. but i definitely need to try another sweetener- maybe gentle sweet??

i’ve been playing around with thm for 5 years, and didn’t think i have trouble with any of the sweeteners, but maybe because i rarely use them straight, except the stevia. i make my own gentle sweet and super sweet blends.
