Hello Summer… oh wait. That’s just my MexiFresh Pizza. Sure does look like summer to me… wishful thinking, I guess! Well, anyway, here is a light & easy meal for dinner or lunch! It is easy and it is fresh! The hardest part might be cooking up some chicken breasts, but if you already have some of that lingering around your fridge, then this is a breeze to make!
Cook up a couple of chicken breasts.
Add spices to make it delish… I added garlic, salt, pepper, chili powder, onion powder, and cumin.
Next gather your veggies and slice them up.
While the chicken is cooking toast up your favorite flat bread. I used a Joseph’s Bakery Lavash Bread (a whole one). I just threw mine into my oven at 400 degrees for 4 minutes.
Once out, layer some of that chopped cooked chicken on the pizza.
Next throw on the cheese of your choice. I used all ready shredded cheddar and mozzarella cheese.
Add your yummy fresh veggies to the top. And you could have more or less or whatever kind you want or have available at the time.
Bake it for another 5 or so minutes depending how well you like your cheese melted.
You could top this with salsa, sour cream, guac instead of avocados, cheese sauce. The options are endless. If you don’t have flatbread make up a quick Bisquick pizza dough (have one of those recipes coming up soon) partially bake, top, and finish baking.
If you follow the Trim Healthy Mama plan, this is an S lunch or dinner but could easily be made into an E meal by adding more veggies and some beans, a tiny bit of fruit salsa, and by using skim mozzarella cheese! Enjoy this little bit of summer!
