Here we go! Sharing my first recipe of many to come! Shepherd’s Pie, both comforting & very filling. Great for a big family like us or for the small couple. Try it out, I’m pretty sure you will like it! It’s an easy dish, not a whole lot of ingredients. And if you just happen to be following the Trim Healthy Mama lifestyle like me then this is a good S dinner for you, as well.
I started out with about 1.5 lbs of ground beef that I browned up. I added some of my favorite veggies – a small onion, three cloves of garlic, several mushrooms, chopped.
While the onion, garlic, & mushrooms cooked into the beef, I boiled up a head of cauliflower to use (instead of mashed potatoes).
For my beef spices I used garlic powder, onion powder, salt, & pepper. About a tablespoon each, except the salt. I added that to taste.
I created a gravy for my beef mixture by adding about 1/2 cup heavy whipping cream and a stick of butter. It works best if you first drain all the excess grease off before adding the butter & cream!
Once the cauli is soft enough, drain the water off, add half a stick of butter, a 1/3 cup heavy whipping cream, 1/2 sour cream, salt & pepper to taste. Throw some mozzarella cheese in for extra yumminess! Mix that up with a hand mixer!
Add one egg & a cup of cheddar cheese to cauli mixture & combine well.
Layer the ground beef in a big oven proof 9X13 baking dish.
Next layer canned green beans. You could probably use only 2 cans but I used 3 (we have a big family).
Pour the mashed cauli mix over the top & spread.
Spread a little more cheese on top because hey, everything is better with extra cheese!
Sprinkle a little chopped chives on top. It looks pretty & tastes good too!
Cover with foil & bake at 350 degrees for 30 minutes!

Must say my family loved this dish. I have only had cauliflower once before and shepard’s pie is a personal favorite before THM. Great dish for THM beginners!

I really want to make this for supper but I don’t have sour cream pr heavy cream on hand and I don’t live in town/city. Could I use cottage cheese and 18% cream instead?

I made this for a British themed party (we watched Lion, Witch, Wardrobe after having read book in a class). It was amazing! My guests loved it and couldn’t tell it wasn’t mashed potatoes! Yummy!! My husband loved it too and I’ll be making this for years to come!

Hmmm, I’ve never frozen it but I think it would work… then just thaw and bake.. maybe drain any excess water?!

I made this tonight & it was delicious, but I would make a few changes. It was a little watery, so I’d cut down on 1/2 & 1/2 added to meat mixture & to what I added to the “potatoes”. I used frozen gr beans, (& maybe that’s the reason for extra wateriness), but next time I will use green peas. The whole fam loved it! Thank you!
