Cauliflower Chowder (THM S, Low Carb)
This was one of those spur of the moment meals that turned out to be a BIG HIT!!! Even for my little almost 7 year old who HATES all things cauliflower!! My husband said “AH-MAZING”!!
I mean, come on… who doesn’t like bacon, butter, cream cheese, bacon, butter… lol!!!
Another easy one here… hardest part is cookin’ the bacon (if you are afraid of getting popped with bacon grease… like me).
Steam the cauliflower…
Chop vegetables and add to the bacon grease….
Mash the cauli just a little and add the other ingredients. Mash a little more… you want to leave it some what chunky.
After veggies are cooked, drain on a paper towel… then add to the cauli chowder.
Top with bacon, cheese & green onions if you want to extend the flavor!! DELISH!!!!
It’s a TRIM HEALTHY MAMA heavy S dish but it hit the spot when we needed quick comfort food!!
Cauliflower Chowder (THM S, Low Carb)
Description
COMFORT FOOD! Cheese, bacon, butter, cheese, bacon!! A creamy chowdery cauliflower soup that is lower in carbs and full of flavor!!
Ingredients
- 1 large head of cauliflower steamed
- 1– 12 oz package of bacon cooked (keep bacon grease to cook veggies in)
- 1 yellow squash chopped
- 1/2 cup of onion chopped
- 2 cloves of garlic chopped
- 1 – 8 oz package of 1/3 less fat cream cheese
- 1/2 cup of heavy cream
- 1/4 cup of butter
- 1/2 cup of parm cheese
- 4 cups of chicken broth
- Salt & Pepper to taste
- Sprinkle red pepper
- Cheese for topping
- Green onions for topping.
Instructions
- Steam cauliflower until tender.
- Cook bacon and set aside onto a paper towel to remove extra grease.
- Save grease to cook vegetables in.
- Chop and cook vegetables in the bacon grease.
- Take out cooked veggies and place on a paper towel to drain extra grease.
- Drain and slightly mash cauliflower.
- Add in butter, parmesan cheese, heavy whip, cream cheese, spices.
- Mix until combined but leave chunky.
- Add chicken broth and vegetables.
- Simmer for 10 minutes,
- Top with bacon, cheese and green onions.
- Enjoy!

This looks sooooo good! I am definitely going to make this the next time I have cauliflower! I was wondering if you have ever tried to freeze this? I was also wondering about freezing the chicken pot pie with the almond flour crust (my favorite THM Meal)? It would be great if in your recipes you indicated if a meal works well for freezing. Thanks for all the yummy goodness!

No, I haven’t tried freezing it. We usually don’t have leftovers very often so I don’t get the opportunity to freeze meals too much! 🙂 I don’t know why it wouldn’t work though! Same with the chicken pot pie! I would maybe partially then bake again once you remove from the freezer. 🙂

Oh absolutely!! I would do exactly what you said and leave the cream for the last 30-15 minutes!

I bake my bacon instead of cooking it in a pan. Preheat the oven to 400. You line a sheet pan or two with aluminum foil and then lay the bacon single file on the foil. Bake for 20 mins give or take.

Your recipe sounds great! Can hardly wait to try it. I just thought I’d share an idea with you about cooking bacon. I used to rarely have bacon because I hated to cook it–so messy, greasy, dangerous, hard to clean up etc. One day I googled cooking bacon in the oven, ah-ha! Yes, lots of people do it. It is so easy. I lay it on a baking sheet with sides and bake at 425 degrees for about 18 min. Perfect. We now have bacon every Saturday. Easy clean up, no getting popped with grease! (It is even easier if you line the pan with foil!)

Just a suggestion for bacon splatter, either use a splatter guard (dollar store cheap ) or bake it in the oven for 15 to 20 minutes at 400 degrees.

Can you use frozen cauliflower or will it be too runny?

I think it would work but you might maybe microwave them for a little to drain the excess water or add less liquid to it! 🙂

I’ve made this before and it was yummy, but it just occurred to me – where is the protein? Bacon, cream cheese and cauliflower all have a little, but I’d be surprised if this is more than 10g a serving.

Hmmm… you can add bits of chicken in if you want to. If you want you can even add in some integral collagen. But since I am a THMer I eat a LOT of protein, this is a littler lighter on the protein but I’m ok what once in a while. 🙂

Gosh that’s a hard one… maybe chicken broth!! That actually could work really well!! To give it flavor… but it would be more like a soup instead of a chowder!

I have always hated to cook bacon, I too am afraid of the popping grease! That being said, I am no longer afraid as I bake it in the oven on jelly roll pans! Line it with non-stick foil and voila, let it cook for 10 min. at 375, and flip another 10 min. and usually done! If not then 5 min. increments!!

I’ve tried making “fotato” soup before from several different recipes but cauliflower as the only vegetable left a lot to be desired and it was never creamy enough. I’m a girl who grew up on real potato soup. It was one of my favorites and I had it all the time as a teenager and would regularly order it at restaurants.
But honestly I prefer this recipe over potato soup. The squash is so perfect and the mixture of vegetables creates an amazing texture.
I will definitely be hanging on to this recipe! It would be great with steak instead of bacon sometimes too! Thank you so much for sharing it with us!
