So I’ve been following the Trim Healthy Mama plan since last May of 2013. I lost 40 lbs! Yay me! I am now 27 weeks pregnant with #6 and at the smallest I’ve ever been pregnant. I also have only gained 4 lbs! Whoop! So why am I telling you this before my cookie recipe? Because I can actually eat these cookies and not feel guilty or worry about gaining back my weight. Yes, I did give up sugar and white flour but it was worth it! The meals/desserts that I eat are amazing and I don’t feel deprived at all! My only problem was I could not find a recipe to replace my favorite chocolate chip cookies so I wracked my brain until I came up with this recipe and it makes me HAPPY!!!! They are YUM!
Mix your cookies up like you would regular cookies. Butter, sweetener, eggs, vanilla. Then add your flour, soda, salt.
Mix up. I LOVE my Kitchen Aid! I have to say the BEST THING I EVER ADDED TO MY KITCHEN!!!
Add your nuts & chocolate chips. Mix again!
Scoop batter on to a cookie sheet covered with parchment paper.
Bake & let cool! EAT UP!!!!
(Once again, these are consider an S dessert if you are following Trim Healthy Mama, but if you would rather not use any sweetener, you can just replace with 1 cup white sugar & 1 cup brown sugar. Keep everything else the same. You could even replace with a 1 cup of honey or 1.5 cup honey.)
ALMOND FLOUR CHOCOLATE CHIP COOKIES

Makes: 24 to 30 Bake: 10 mins at 375 degrees
2 and a half cups of Almond Flour (I use Trader Joe’s Almond Meal Flour, it’s like less than $5 for a 1 lb bag)
2 sticks of butter or 1 cup of butter
1 tsp vanilla
1/2 tsp maple flavoring (you could do without this but it gives it the brown sugar flavor)
1 and a 1/4 tsp baking soda
1 tsp salt
2 cups of ground up xylitol (Here is where you can experiment with what works for you. You could use Swerve or Truvia or Splenda or Stevia (only add a tsp or so of stevia) or Sugar or Honey.)
1 cup of pecans
1 cup of sugar free chocolate chips (I used Hersey’s Sugar Free Chocolate chips but this is NOT on THM plan but it is sugar free. You can also chop up 85% chocolate & replace the sugar free chips with that instead. Or find the on plan sweetened kind, I have not found them… YET!)
Mix butter & sweetener together. Add the 3 eggs and extracts. Mix. Add your flour, salt, soda. Mix. Add your nuts and chocolate. Mix well, scraping the bowl. Cover a cookie sheet
with parchment paper and layer your cookies three in a row. Bake at 375 degrees for 10 minutes. Allow to cool for 5 minutes before removing from cookie sheet. ENJOY!!!
